Que Tal.

Once upon a time there was a restaurant here named Que Tal. It was similar to Chipotle. We went there once and decided that we could make that meal ourselves and we have been making it nearly every other week since. It is a family favorite.

Here's what you do.

  • Cook rice (we make three cups raw rice for our family.... enough that Jeremy will have leftovers the next day). When it is done cooking, add about 1/2 a cup of cilantro and lime juice (to taste).

  • Cook 2-3 diced chicken breasts on the stove (or you could grill it). Add 1/2 cup salsa to the chicken before serving.

  • Serve it with all of your favorite Mexican toppings. We like cheese, olives, tomatoes, sour cream, diced avocado, black beans, corn and more fresh salsa.

It's so yummy... and pretty healthy too!
