lunchtime.
For the past two months I've really tried to eat more healthy. I am not on a diet, just trying to make healthier choices. Breakfast is easy, cereal and some fruit. Dinner is easy, I have several new cookbooks that have been fun to work my way through. Lunchtime is hard. Lunch food is so boring. I recently made a wrap that was so delicious I had to share.
Start with a whole wheat tortilla. Spread one wedge Laughing Cow cheese on the center of it (I used Light garlic and herb cheese).
Add some lettuce....
A little broccoli slaw (found near the bagged lettuce in the produce section).
A little tomato...
Some lunchmeat (turkey for me, please).
Wrap it all up in a little bundle. Stick some toothpicks in to hold it together. (everything is more fun to eat if it's held together by a toothpick... wouldn't you say?)
Cut it in half for easier eating, add some fruit, the leftover tomato (with salt), and a little pudding cup for dessert and you're all set!

One of my favorites is a tortilla, spinach or tomato are my favorites, a little Caesar salad dressing, fresh spinach leaves and a few grilled chicken tenders. Mmmmmmm
Wow, that is way too balanced and healthy looking for me. It looks fabulous. I really need to get my act together in the eating department.
